Sanitas Brewery to Open This Spring

Sanitas Brewing Company to Open in Central Boulder

BOULDER, COLORADO, JANUARY 3, 2012 – Three area brewers announce the opening of Sanitas Brewing Company, a new production brewery making unique, sustainably-made artisan beer in Boulder, Colorado.

Former Boulder Beer Co. brewers Michael Memsic and Chris Coyne, alongside Zach Nichols of Redstone Meadery, will open a large brewery and tap room in central Boulder. Sanitas Brewing Company, named after one of the area’s most iconic mountains, will self-distribute two flagship beers to liquor stores, bars, and restaurants. These Sanitas beers will be brewed with the finest organic ingredients and canned for quality and packability.

Sanitas will also feature a rotation of experimental and high gravity beers that will be available in bottles and on draft. The super-premium beers will feature wild yeast, local fruits & spices, and will be barrel aged and packaged in corked and caged bottles.

“We are hell-bent on offering a rather large variety of styles, all unique in their own right,” says Memsic, “Craft beer drinkers prefer variety, rarely drinking the same style over and over again. Likewise, good beer becomes great depending on external factors. Some beer pairs well with fine food. Some beers shine on a hot day while others are great on a chilly night. We want to make lifestyle brands, beers you can enjoy after an afternoon of hiking and others meant to be enjoyed among friends at a dinner party.”

“We don’t necessarily have a style tendency,” states Coyne, “be it Belgian, American, etc. We will simply make an evolving lineup of great beer inspired by age-old and modern styles.”

The founders will soon begin renovation of a vacant warehouse building in central Boulder. They are turning to local artisans and suppliers for everything from their tap handles to their wall art. The transformation is expected to be completed this spring and the taproom will open to the public soon after.

“We are very excited about the taproom,” says Nichols, “For every beer that comes out of our facility, there is a drinker. We want to meet these people. We want them to get to know us. This is what the tap room is for; it is the place where the beer and the people come together. Throw in a patio with great mountain views, food carts, music performances, and the opportunity for consumers to sample small batch styles, and you have a true destination. The Sanitas tap room will be built for Boulder and the people.”

Sanitas will utilize a brand new 15-barrel brewhouse for all of its initial production. It will also begin with an extensive barrel-aging program, sourcing barrels from all over the world.

“Mike and I have extensive experience in barrel-aging. We anticipate this being a component in many of our beers,” explains Coyne, “There are a lot of breweries in the area, but there are also a lot of savvy drinkers. We look forward to working alongside fellow Colorado breweries and offering something different to the consumer. The three of us really enjoy beers that challenge general perception of what beer is. Drinkers can expect this to translate into our brands.”
